Dry-rubbed with smoked salt and black pepper, seared hard in cast iron, then braised low and slow for six hours in our house bone broth. The collagen breaks down into silk.

Copper River Salmon

Copper River king salmon — the highest omega-3 density of any wild-caught Pacific salmon. Harvested May through September, flash-frozen at the dock within hours.
Cured overnight in raw honey, sea salt, and dill. Roasted at 325°F on a bed of parsnip, celeriac, and golden beets until the fat renders white and the flesh just flakes.

Roasted Marrow Bones

Femur bones from Laughing Stock Farm, Eugene, Oregon — pasture-raised, never grain-finished. The marrow is dense, yellow-gold, and deeply mineral.
Soaked in salted cold water for 24 hours to draw out blood. Roasted in a ripping-hot oven at 450°F for exactly 18 minutes. The center should tremble when you tilt the bone.
